Tofu is a "cheese-like" substance made from fermented soya-beans. Tofu doesn't really have a lot of flavor itself, but it takes on the flavor of the foods/spices it is cooked with. In North America, you can buy tofu in most supermarkets, health-food stores, as well as in Asian food stores. Many vegetarians cook with tofu, as it is a good, nutritious substitute to meat.
